Gluten-Free Vegan Focaccia



My mom, who was diagnosed with Crohn's Disease about 17 years ago and with Celiac Disease several months ago, asked me to bake her gluten-free focaccia bread. Never mind the fact that I rarely work with yeast, how could I refuse her request? I scoured the internet and came up with this recipe.

I don't suggest you try this recipe as it didn't work for me. My yeast was brand new, I proofed it properly, even taking the water's temperature, and it still didn't rise. It remained pretty doughy after the required baking time, too. Considering how expensive the ingredients were, I expected more, but I guess we can't win them all.

Despite all this, my mom loved it! I think I'll try again and see what happens.

Even though it didn't turn out lik eyou had hoped, it still looks great and your mother loved it! That's the best praise there is, in my opinion haha

Le plus important, c'est que ta maman l'a bien aimé! I need to try to make more GF things, but it looks a little tricky sometimes.

Vegan and gluten-free yeast products are definitely a challenge. I designed this recipe to be completely allergy-free for a gluten-free potluck so I couldn't use ingredients like Bean flour or almond meal that would have improved texture. You might try Carol Fenster's pizza crust that is naturally vegan next time:

You could add olives or other toppings to taste. Carol's recipe is pretty much a fool proof recipe and I think you will be happier with it.

What a sweet try though. So glad your mom appreciated your efforts. I hate it when my yeast doesn't do it's job. Sure looks good though! Keep on trying. :o)

Oh, do keep trying. I've got my eye out for a gluten free yeast bread. It would be a dream come true.

You're so brave to try a GF AND yeast-full bread in one! I'm the same way with yeast. . . must get over that fear! But the foccacia does look great, and glad your mom liked it!

Sorry about your rising issues. I have those a lot, too. I would love to get better at making yeast breads. I'm so glad, though, that your Mom liked it! It does look really good.
