Samosa Stuffed Baked Potatoes
I don't think I've ever used a cookbook as frequently as I use Veganomicon. It actually surprises me, since my M.O. is to buy tons of vegan cookbooks, read them like novels, and return them to my cookbook shelf until it's time to re-read them (and, believe me, I re-read them often). In any case, Monday night, I decided to make the Samosa Stuffed Baked Potatoes. I added extra carrots and omitted the onion, used 3 garlic cloves instead of 2, and added the juice of 1 tiny lemon instead of 1/2 of a lemon. I confess that I let some of the carrots burn while I was hollowing out my potato halves, but I didn't mind. I packaged up the stuffed potatoes for this week's lunches with a side of plain peas (and my requisite red grapefruit) and was a happy girl. These are really wonderful and my co-workers keep wondering what smells so good after I'm done using the microwave. ;)

Yum! I'm determined to get off my lazy butt and actually make this recipe, it just looks so good. How could samosas in any form be bad anyways?

I always seem to add more garlic than recipes call for as well. :-)
Those potatoes look yummy! There are so many recipes in VCon that sound wonderful, I really think I'd like to try pretty much every single one (except the eggplant ones).

I loooove Veganomicon. I can't believe how much I use it as well. I hadn't even thought of it, since there are so many recipes, it just feels like I've made a few. I have yet to try those potatoes though, it's something I've been itching to do for a while though!
I swear, there's not a single veg*n blog that isn't abuzz over Veganomicon!

oh, I need to really get cooking with my V-Con- for shame, I have read it tons of times and have yet to make a thing...and yet, I keep drooling over everyone's V-Con goodies...

mmm baked potatoes! you're a smarty for baking a billion beforehand and packaging them up for work. recently i became a fan of the microwave-baked sweet potato. the "potato" function on my dorm microwave actually was like a mind reader and cooks those babies perfectly!
v-con is amazing, and it almost makes me distrustful of any other cookbook. it's like, "hmmm...i'm not sure that this recipe could be better than the one in veganomicon..." :)
