This is a spectacular Arroz con Seitan from Terry Hope Romero's Vegan Latina project. It called for making seitan from scratch, a flavorful and easy seitan recipe that I know you'll love when the cookbook is published. Together, the dish is comforting and filling, hitting each of the taste buds perfectly.
