VeganMoFo: Root Beer Float Cupcakes



When I was growing up, my dad would occasionally make us root beer floats for dessert. His preferred root beer came in a glass bottle and, I believe, he liked French vanilla ice cream best (although, it could have been vanilla bean).

This year, he was in town on his birthday and we all went to dinner. I decided to bake something for him and immediately thought of the Root Beer Float Cupcakes from My Sweet Vegan. I had a bottle of Virgil's Root Beer (no high-fructose corn syrup for me!) and had bought a bottle of root beer extract ages ago at Surfas (a restaurant supply store in Culver City), knowing that I would eventually make this recipe. Having the necessary ingredients on hand made this recipe quick and easy. I opted to leave off the Chocolate Ganache because we'd never included chocolate in our root beer floats, but I otherwise stuck to the recipe. The cupcakes were delicious and truly tasted like root beer!

This is GENIUS and those cupcakes are picture perfect, how did you get such beautiful icing? I have great memories of root beer floats growing up, too. My mom would make herself, me and my sister huge root beer/vanilla ice cream floats and we would sit around with a bowl of popcorn and play silly board games like Clue and Mall Madness. Oh Mall Madness was the best.

I've never had root beer or a root beer float, it is not something that really is on the radar here in Australia.

The cupcakes look beautiful!
